Here's a great way to use up some of that extra zucchini that tends to show up in the summer months. Ingredients:
3 eggs |
2 c sugar |
1 c oil |
2 t vanilla |
3 c flour |
1 t salt |
1 t baking soda |
1 t baking powder |
1 c chopped nuts |
2 c grated zucchini |
1 c crushed pineapple, undrained |
1 t cinnamon |
Directions:
1. Beat together eggs, sugar, oil, and vanilla. 2. Sift flour, salt, soda, and baking powder; add to egg mixture. 3. Add nuts, zucchini, pineapple, and cinnamon. 4. Mix until well blended. 5. Pour into 2 greased and floured 9x5 bread pans. 6. Bake at 325 for 45-60 min or until toothpick comes out clean. |
