I like the fact that applesauce can be used instead of oil... i have not made this but it sounded good so I thought I would share... the recipe is from the: Anchorage Mahogany Manor Historic Downtown Inn 204 East 15th Avenue Anchorage, AK 99501 Ingredients:
• 3 eggs |
• 2 cups sugar |
• 1 cup vegtable oil or applesauce |
• 1 1/2 teaspoons vanilla |
• 2 cups grated zucchini |
• 1 cup crushed pineapple, drained |
• 1/2 cup raisins |
• 1 cup walnuts (optional or substitute other nuts) |
• 3 cups flour |
• 1 teaspoon baking powder |
• 1 teaspoon baking soda |
Directions:
1. Beat together eggs, oil, sugar & vanilla until mixed well. 2. Blend in the zucchini. 3. Add dry ingredients (flour, baking powder, baking soda) slowly (1 cup at a time) and mix well. 4. Stir in pineapple, nuts & raisins 5. Pour into greased and floured loaf pan(s) and bake approximately 1 hour at 350. (Small individual size pans will take less baking time) |
