pie with zucchini, tomato, cheese, and egg Ingredients:
1 frozen pie crust, 9 inch |
2 medium zucchini squash, sliced |
2 small whole tomatoes, sliced |
3/4 cup egg beaters |
3/4 cup organic feta cheese |
3/4 cup shredded mozzarella |
1 tsp olive oil |
Directions:
1. layer sliced zucchini and tomato slices in pie crust 2. blend cheeses and egg together, then pour over veggies in pie crust 3. bake according to pie crust directions (in this case it was 40 mins at 350 degreese, covered the crusts all the way through, covered the top of pie with aluminum foil for the first 30 mins) until crust and fililng are cooked |
