Yummy,Savory,great use for all those zucchini that are coming your way this summer.This also freezes well but never gets to my freezer.Also makes it's own crust. Ingredients:
3 cups thin sliced zucchini |
1 cup bisquick or 1 cup basic bisquick baking mix |
1/2 cup chopped onion |
1/2 cup parmesan cheese, grated dry type will do |
1 teaspoon salt, to taste |
1/2 tsp.black pepper |
1/2 cup oil |
4 eggs, slightly beaten |
tsp.fresh parsley |
Directions:
1. Mix all ingredients. 2. Place in an oiled casserole dish or pie pan. 3. Bake 30 minute at 350 deg. 4. Serve hot or cold. 5. You may choose to add extra grated cheese. |
