ZUCCHINI PIE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Granbury, Texas in 1987. Ingredients:
4 cups single sliced 1/4 thick |
1 cup warm water |
1 cup brown sugar |
1 teaspoon cinnamon |
1 teaspoon cream of tartar |
1 single unbaked pie shell |
topping |
1/2 cup granulated sugar |
1/2 cup flour |
1/2 cup butter |
Directions:
1. Parboil prepared zucchini in salt water until tender then drain and put in bowl. 2. Add warm water, sugar, cinnamon and cream of tartar then place in unbaked pie shell. 3. Bake 30 minutes at 350 then top with combined topping ingredients. 4. Return to oven for 45 minutes. |
