A good way to use up little bits of veggies. The Swiss cheese is optional, but it really adds to the flavor of the pie...from Betty Crocker. Ingredients:
1 small zucchini, chopped (1 c.) |
1 large tomato, chopped (1 c.) |
1 medium onion, chopped (1/2 c.) |
1 cup swiss cheese, shredded |
1/2 cup original bisquick baking mix |
1/3 cup parmesan cheese, grated |
1 cup milk |
1/2 teaspoon salt |
1/8 teaspoon pepper |
2 eggs |
Directions:
1. Preheat oven to 400. 2. Spray 9 pie plate with cooking spray. 3. Layer zucchini, tomato and onion in pie plate. 4. Sprinkle with Swiss cheese. 5. Stir remaining ingredients in medium bowl with wire whisk or fork until blended. 6. Pour into pie plate. 7. Bake about 35 minute or until knife inserted in center comes out clean. 8. Let stand 5 minute before serving. |
