Yummy way to use extra zucchini Ingredients:
2 lbs zucchini |
2 onions |
1/4 cup salt |
2 cups white vinegar |
2 cups sugar |
1 teaspoon celery salt |
1 teaspoon turmeric |
1 teaspoon mustard seeds |
Directions:
1. Wash & thinly slice zucchini (leave skin on) peel & quarter onion & cut in this slices. Cover with water & salt let sit for 2 hours. Drain thoroughly. Bring remaining ing to a boil, pour over veg let stand for 2 hours, bring to a boil. Boil for 1 minute Pack in Hot sterilized jars and seal! |
