Shredded zucchini and veggies baked in thin patties Ingredients:
2 cups zucchini, grated |
1 egg |
1 egg white |
1/4 cup onion, minced |
1/2 cup potato flakes |
1/2 cup carrot, grated |
1/2 cup mozzerella cheese |
Directions:
1. In a medium bowl combine zucchini, eggs, carrot, onion, carrot and cheese. Mix thoroughly. 2. Line a large baking sheet with foil and spray lightly with cooking spray. 3. Scoop zucchini mixture 1/4 cup at a time and flatten into thin patties on cookie sheet. 4. Bake at 450 degrees for 25 minutes and then broil for approximately 3 minutes until browned on top. |
