A light fast summer side dish to make when your husband is grilling. They go fast! Ingredients:
1 zucchini, grated |
1 carrot, grated |
2 eggs |
1 cup milk |
1/2 cup flour |
2 teaspoons instant minced onion |
1/2 teaspoon garlic powder |
salt |
pepper |
cooking oil |
Directions:
1. Heat 1/2 oil in frying pan. 2. Beat eggs. Add milk till blended. 3. Then add flour, zucchini. carrots, onion, garlic powder and salt and pepper. Drop by large spoonfuls in hot oil. Brown on one side then turn to brown on second side. Drain on paper towels. 4. Serve warm. |
