Zucchini Parmesan With Lemon |

And now for something completely different................ Ingredients:
2 lbs small zucchini |
1 teaspoon olive oil |
1 teaspoon lemon, rind of, grated |
2 tablespoons grated parmesan cheese |
1/4 teaspoon black pepper, freshly ground |
Directions:
1. Cut zucchini in half crosswise, then cut each half into 4 lengthwise sticks. 2. Heat oil in a heavy nonstick skillet over medium high heat. 3. Sauté zucchini and lemon peel about 3 minutes, stirring frequently, until zucchini is lightly browned. 4. Mix in Parmesan cheese and pepper to taste. |
