My daughter made dinner for us yesterday, and she tried a couple new recipes...we really enjoyed this vegetable side dish. The Parmesan cheese definitely kicked up the flavor of the zucchini! Ingredients:
2 small zucchini |
1 teaspoon extra virgin olive oil |
salt, to taste |
pepper, to taste |
2 tablespoons fresh grated parmesan cheese |
Directions:
1. Cut zucchini in half lengthwise, and then cut each half lengthwise again, yielding 4 sticks per zucchini. 2. Cut the sticks in half crosswise, yielding 8 sticks per zucchini. 3. In a large frying pan, heat the olive oil and add the zucchini sticks to the pan; cook for 4 minutes, stirring occasionally. 4. Sprinkle zucchini with salt and pepper; continue to cook, stirring occasionally, until zucchini is tender but still slightly crisp, usually about 4 to 5 minutes. 5. Remove pan from heat and sprinkle zucchini with Parmesan cheese; cover pan and allow cheese to set on zucchini until it is melted, about a minute or less. 6. Serve immediately. |
