This is a favorite side dish of my family. Ingredients:
1/2 teaspoon minced garlic |
1 tablespoon olive oil |
4 medium zucchini, cut into 1/4-inch slices |
1 (14 1/2 ounce) can italian-style diced tomatoes, undrained |
1 teaspoon seasoning salt |
1/4 teaspoon pepper |
1/4 cup grated parmesan cheese |
Directions:
1. Saute garlic in oil. 2. Add zucchini and cook for 4-5 minutes. 3. Stir in the tomatoes, seasoned salt and pepper. 4. Simmer, uncovered, for 9-10 minutes or until liquid is absorbed and mixture is heated through. 5. Sprinkle with as much parmesan cheese as you like (I never measure it). |
