I got this recipe from my mom who used to make these when I was growing up. Ingredients:
2 eggs, separated |
2 cups zucchini, peeled & grated |
1/2 cup flour |
3/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Beat egg whites until stiff, but not dry. 2. In separate bowl, mix egg yolks, zucchini, flour, salt & pepper. 3. Stir in egg whites. 4. Cook and serve with maple syrup. |
