Zucchini Pancakes

I think this is a great way to get some veggies into your kids! They all love this little side dish. I don't add salt because of the parmesan cheese. Feel free to add some if you need to. This makes about 12 - 14 little pancakes.
Ingredients:
1 1/2 cups grated zucchini
2 tablespoons chopped onions
1/4 cup parmesan cheese
1/4 cup flour
2 eggs
2 tablespoons mayonnaise
black pepper
Directions:
1. Mix all ingredients together well. (I usually use dried onion flakes for this dish).
2. Drop by tablespoon full in a little bit of hot oil, a couple of minutes per side, until lightly browned.
