It's easy to change this by varying the seasonings, but this is a basic recipe for zucchini fries that is easy and delicious. Ingredients:
2 medium zucchini |
6 tablespoons low fat milk |
2 egg whites |
1 cup dry bread crumbs, can use seasoned |
1 teaspoon kosher salt |
1/2 teaspoon, or more, fresh ground pepper |
4 tablespoons grated romano cheese |
cooking spray |
dippers: ranch dressing, seasoned sour cream, warm marinara sauce. |
Directions:
1. Preheat oven to 425°. 2. Spray a rimmed baking sheet with cooking spray. 3. Cut zucchini in half lengthwise and if the seeds are large, scoop out seeds and discard. 4. Cut the zucchini into french fry type strips. 5. In a bowl, whisk the egg whites and milk together. 6. In a shallow dish, mix together bread crumbs, salt, pepper and cheese. 7. Dip the zucchini strips into the egg white mixture until well coated. 8. Dip the zucchini strips into the bread crumb mixture until well coated. 9. Place the strips on the baking sheet leaving space between each stip. 10. Bake about 6-7 minutes on each side. 11. Handle gently with a spatula when turning so you don't lose any of the bread crumbs. 12. Dippers: ranch dressing, seasoned sour cream, warm marinara sauce. |
