Zucchini or Yellow Squash Patties and Dressing |

-Adopted Recipe- Ingredients:
2 cups zucchini or 2 cups yellow squash, peeled, grated |
1 teaspoon salt |
2 tablespoons sugar |
1 egg |
1/2 cup flour |
1 small onion, grated |
1/2 cup onion, chopped |
1/2 cup green pepper, chopped |
1/2 cup celery, chopped |
1/2 cup butter |
5 cups cornbread, crumbled |
2 cups milk |
1 (10 3/4 ounce) can cream of chicken soup, undiluted |
3 cups yellow squash, cooked, drained |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Mix all non-dressing ingredients well and drop by teaspoon into hot oil. 2. Fry until golden brown. 3. YELLOW SQUASH DRESSING:. 4. Saute onion, pepper and celery in butter until tender. 5. Add to cornbread and stir well. 6. Stir in remaining ingredients mixing well. 7. Pour into a greased 13 x 9 x 2-inch baking dish. 8. Bake at 400 degrees for 50 minutes or until lightly browned. |
