Zucchini Onion And Carrot Saute |

This is a great recipe for all the extra squash in your garden, you can use yellow summer squash instead of zucchini or use both. Ingredients:
4 zucchini, about 1 ib. |
1 cup thinly diagonally sliced carrots |
2 cups thinly sliced onions |
1 tsp. salt |
1/8 tsp. black pepper |
1 tsp. dried basil leaves, crushed |
1/4 cup pure olive oil |
Directions:
1. Wash zucchini but do not peel. Cut into thin, diagonal slices. Put into 10-inch skillet. 2. Add carrots, onions, salt, black pepper and basil. Pour olive oil over top. Stir gently until well mixed with vegetables. 3. Over medium heat saute vegetables for 5 min., stirring often. Reduce heat to low. Cover vegetables and cook 5 min. longer. 4. Remove cover. Stir and cook about 10 more min. until vegetables are tender-crisp. 5. Correct seasoning. Serve very hot. |
