ZUCCHINI OATMEAL MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984.
Ingredients:
2-1/2 cups flour
1-1/2 cups sugar
1 cup chopped pecans
1/2 cup quick cooking oatmeal uncooked
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
4 eggs
1 medium zucchini finely shredded
3/4 cup salad oil
Directions:
1. Grease 12 muffin pan cups then preheat oven to 400.
2. In large bowl measure first 7 ingredients.
3. In medium bowl beat eggs then stir in zucchini and oil.
4. Stir mixture all at once into flour mixture just until flour is moistened.
5. Spoon lumpy batter into muffin cups then bake 25 minutes.
