From Rosebud - Treasure County Extension Office Ingredients:
2 1/2 cups flour |
1 1/2 cups sugar |
1 cup chopped pecans |
1 1/2 cups oatmeal |
1 tablespoon baking powder |
1 teaspoon salt |
1 tablespoon cinnamon |
4 eggs |
2 cups shredded zucchini |
3/4 cup vegetable oil |
Directions:
1. In bowl mix together flour, sugar, pecans, oatmeal, baking powder, salt and cinnamon. Add eggs, zucchini, and vegetable oil. Mix until ingredients are barely moistened. Batter will be lumpy. Put in greased muffin tins. Bake in 350 degree oven for 15 to 20 minutes. Makes 21 regular sized muffins. |
