                    A summertime favorite of ours and a good way to use up zucchini. Ingredients: 
                    
                        
                                                4 cups diced zucchini (about 3)  |  
                                                1/2 cup coarsely chopped pecans  |  
                                                1/4 cup green onion  |  
                                                1/4 cup parmesan cheese  |  
                                                1/2 cup ranch dressing  |  
                                                4 slices cooked bacon, crumbled  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Combine zucchini, nuts and onions. 2. Chill. 3. Just before serving toss with parmesan cheese and just enough dressing to moisten. 4. Garnish with bacon.                              |
