Ingredients:
2 cup(s) all-purpose flour
3 teaspoon(s) baking powder
2 teaspoon(s) baking soda
6 tablespoon(s) canola oil
2 eggs, beaten
1 cup(s) granulated sugar
2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) ground nutmeg
1 1/2 cup(s) low-fat milk
1/4 cup(s) packed brown sugar
1/2 teaspoon(s) salt
3 cup(s) shredded zucchini
2 cup(s) whole wheat flour
Directions:
1. Preheat over to 350 degrees.
2. Shred zucchini in Cuisinart. Place dry ingredients in mixing bowl and stir to mix. Make a well in the center of the mixture. Pour in milk, oil and beaten eggs. Stir at low to medium speed. Add zucchini and stir slowly until incorporated.
3. Prepare muffin pans with muffin cups or non-stick spray. Pour batter into muffin cups.
4. Bake for 20-25 minutes.
