This is just your basic zucchini muffin recipe, but I adapted it to make it lower in fat. My kids love this. Ingredients:
3/4 cup egg beaters egg substitute |
3 teaspoons vanilla extract |
3 teaspoons ground cinnamon |
1/2 teaspoon ground nutmeg |
3 cups all-purpose flour |
1 cup applesauce |
2 cups grated zucchini |
2 cups sugar |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon baking powder |
Directions:
1. Mix egg beaters and vanilla, beat until well blended. Add Cinnamon, nutmeg, flour, oil, zucchini to egg mixture and beat well. Add sugar, baking soda, salt and baking powder, blend well. Bake at 350 for 15 to 20 minutes. Makes 30 muggins. |
