A girl I worked with a very long time ago (Christine Hammel) brought this loaf to work and I couldn't get enough of it. So she gave me the recipe. (I begged her) Mmmm, mmmm, good. Ingredients:
3 eggs |
1 cup vegetable oil |
2 cups brown sugar |
2 cups zucchini, grated |
3 teaspoons vanilla |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
1 teaspoon baking powder |
3 teaspoons cinnamon |
1 cup chopped walnuts or 1 cup raisins |
1 cup chocolate chips (optional) |
Directions:
1. Line 2 loaf pans with parchment. 2. Mix everything together and mix well. 3. Set oven to 350F and bake for 60 minute. 4. Happy Snacking! |
