Here is a simple and beautiful side dish that goes great with fish or chicken. Simple yet elegant. From Cuisine at Home. Ingredients:
2 8 inch long zucchini, ends trimmed |
2 tablespoons olive oil |
1/2 lemon, juice of |
salt and pepper |
Directions:
1. Julienne just the outsides of each zucchini lengthwise using a mandoline or by hand. 2. Discard seed core. 3. Heat oil in a large nonstick skillet over medium-high heat. 4. Add zucchini and sauté 3 minutes, or until soft. 5. Season with lemon juice, salt and pepper. |
