This dish can be prepared with just vegetables or with ground beef. Ingredients:
4 to 5 zucchini, depending on size |
2 cups prepared tomato sauce |
1 onion, diced |
3/4 cup diced green peppers |
1/4 cup finely diced celery |
1 tsp oregano |
1/4 to 1/2 lb ground beef (optional) |
8 oz mozzarella cheese |
parmesan cheese, to taste |
2 lbs ricotta |
Directions:
1. Slice zucchini lengthwise, about 1/4 inch thick, and steam until al dente. Set aside. 2. Saute onion, peppers, celery and ground beef . 3. Add tomato sauce and oregano and simmer for 5 minutes. 4. Layer 13x9 pan , that has been sprayed with cooking spray, with sliced zucchini. 5. Top zucchini with half of the ricotta cheese and then a layer of sauce. 6. Top sauce with half of the mozzarella cheese and more sauce. 7. Repeat layers ending with sauce and finally topping with Parmesan cheese. 8. Bake at 350 degrees for 40 minutes. |
