Great for summer. These fritters can be served with pesto or my Singing Cilantro Mayonnaise! Yum, they are oh, so good! Ingredients:
1 egg |
2 tablespoons milk |
1/2 cup flour |
1 teaspoon baking powder |
tabasco to taste |
salt and freshly ground black pepper to taste |
2 pounds small green zucchini, coarsely grated, or can use food processor and make into julienne strips |
1/2 coarsely grated onion |
Directions:
1. In bowl, lightly beat egg 2. Stir in milk, flour, baking powder until mixed well 3. Add Tabasco, salt, pepper 4. Stir in zucchini and onion 5. Let mixture rest for about 15 minutes 6. Place 1/4 inch of vegetable oil in a large heavy skillet (iron is best) 7. Heat until hot over medium heat 8. Drop by teaspoons of batter into oil, without overcrowding 9. If making as an appetizer, use teaspoons, if using for a side, make them larger 10. Cook until brown on both sides, about 2 minutes per side 11. Drain fritters on paper towels 12. Repeat until all have been cooked 13. Serve warm with pesto, cilantro mayonnaise, or your favorite dipping sauce |
