Have this delicious vegetable side dish at our local diner whenever it is available, I decided to give it a try at home and was not dissappointed. The flavor and texture was spot-on. I hope you like it too.. Ingredients:
3 medium sized zucchini |
1 large onion |
3 t olive oil + 1 t |
1 15 oz. can whole tomatoes |
2 t dried basil |
kosher salt |
freshly ground black pepper |
Directions:
1. Cut all 3 zucchini in half lengthwise. Slice into 1/4 discs. 2. Cut onions in 1/4 slices. 3. Saute zucchini and onion in 3 T olive oil in large frying pan just until it gets some color on the vegs. 4. Crush the whole peeled tomatoes and add to 1 T olive oil in medium saucepan, Add basil. 5. When vegs have gotten some color, add them to the tomatoes in the saucepan and add salt and pepper to taste. Cook for 45 minutes over medium/low heat covered. Stir once or twice. |
