Use good quality olive oil and sunflower oil. The olive oil gives a delicious flavor but is not allowed to overpower the zucchini. Ingredients:
1 tablespoon olive oil |
1 tablespoon sunflower oil |
1 large onion, chopped |
1 garlic clove, minced |
5 zucchini, cut into 1/2in slices |
2/3 cup chicken stock or 2/3 cup vegetable stock |
1/2 teaspoon dried oregano |
salt and pepper |
Directions:
1. Heat both oils in a large frying pan and fry the onion and garlic over a moderate heat for 5-6 minutes until the onion has softened and is beginning to brown. 2. Add the zucchini and fry for a further 4 mins until they just begin to be flecked with brown. Stir frequently. 3. Stir in the stock, oregano and season to taste. Simmer gently for 8-10 mins until the liquid has almost evaporated. 4. Spoon the zucchini into a serving dish, and serve. |
