This is a quick vegetarian dish I grew up with. It was always an accompaniment to some meat or other main meal. This is particularly nice if you like to lay out a few dishes to share like Tapas or Mezze! Ingredients:
2 large zucchini |
2 cloves garlic |
balsamic vinegar |
salt/pepper |
olive oil (light ) |
extra virgin oil (optional) |
Directions:
1. Wash zucchini, trim ends, then slice into even round circles (2 cm) 2. Slice garlic into thin slivers 3. Saute garlic in frying pan with a little light olive oil. 4. Remove and set aside 5. In the same pan saute the zucchini slices, turning after a few minutes till they have browned nicely. You may need to add a little more oil as you go. 6. Once all the slices are cooked add the garlic back in and add a splash of balsamic, shaking it around the pan as it sizzles and soaks into the zucchini.Turn the heat off and leave in the pan for a minute. 7. When serving, it is optional to add a generous douse of extra virgin olive oil. This will give the dish more juice to mop up with crusty bread! |
