Ingredients:
3 cups shredded zucchini |
1 medium carrot, sliced,approximately 1/2 cup |
1 small onion, chopped |
2 tablespoons parsley, snipped |
1 cup biscuit mix |
3/4 cup cheddar cheese or 3/4 cup american cheese, shredded |
1/4 cup oil |
3 eggs, slightly beaten |
1/2 teaspoon salt |
1/2 teaspoon oregano |
1/4 teaspoon pepper |
1/8 teaspoon garlic powder |
Directions:
1. Combine all ingredients and pour into greased casserole or baking dishes. 2. Bake 350 degrees for 30 to 35 minutes or until golden brown. 3. Can also be used as a vegetable side dish for chicken or meatloaf. |
