a friend gave me some of this bread and then I definitely wanted the recipe..so here it is! Ingredients:
3 cups flour |
1 teaspoon baking powder |
1 tablespoon ground cinnamon |
1 teaspoon baking soda |
1 teaspoon salt |
1 cup pecans, chopped |
2 cups zucchini, shredded |
2 large eggs, lightly beaten |
1 1/2 cups sugar |
2 teaspoons vanilla extract |
3/4 cup honey |
1 cup vegetable oil |
Directions:
1. combine dry ingredients, combine zucchini and remaining ingredients in another bowl.stirring well.add to dry flour ingredients.just till dry ingredients are moistened. 2. spoon batter into 2 greased and floured 8x4 pans. 3. bake at 350* for 1 hour and 10 minutes or wooden toothpick comes out clean when inserted near the center. 4. cool in pan on rack for 10 minutes. 5. remove from pan and complete cooling. |
