This is a recipe I have had for about twenty years and filed it away and just came across it again today. I made it just to refresh my memory and it is very good. I got this recipe from an old relative. Ingredients:
1 cup grated zucchini |
3/4 cup margarine, softened |
1/2 cup white sugar |
1/2 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
1 3/4 cups flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
3/4 cup raisins |
1/2 lb mixed fruit |
4 ounces cream cheese |
1 1/2 cups icing sugar |
2 tablespoons butter |
1 teaspoon vanilla |
Directions:
1. Cream margarine and sugars. 2. Add eggs and vanilla and beat. 3. Mix fruit and raisins with dry ingredients. 4. Add dry ingredients and zucchini to creamed mixture. 5. Grease a jelly roll pan, 15 1/2 x 10 1/2 . 6. Bake at 350° for 25 to 30 minutes. 7. Ice when cool. 8. Icing; Beat cream cheese, icing sugar, butter and vanilla until light and fluffy. |
