Zucchini Fritters Lebanese Style

This dish is called Koosa Maklee Koosa (Lebanese summer squash)or Zucchini Fritters make a nice breakfast or light lunch. It is also one more tasty weapon in your arsenal to deal with all that zucchini that flows out of your garden this time of year.
Ingredients:
vegetable oil for frying
4 eggs
8-9 tbls flour
1 1/2 tsp salt
1/4 tsp fresh ground pepper
1 cup fresh mint leaves, chopped or 4 tbls dried
1 cup parsley finely chopped
2 1/2 cups grated or finely chopped koosa or zucchini squash. (do not peel)
1 recipe basic yoghurt dressing (posted in my recipes)
Directions:
1. In a heavy skillet, heat 1 inch of oil over medium heat.
2. Beat Eggs; stir in Flour, Salt and Pepper. Gently fold in Mint, Parsley and Koosa or Zucchini until the batter is uniform.
3. Drop by large Tablespoons into hot oil and fry to a medium golden brown. Drain on paper or cloth towels and keep warm in low oven until ready to serve.
4. Serve with Lemon wedges, Yoghurt dressing or a salad made with Yoghurt Dressing
