You can smell these fritters a mile away. They're crispy and delicious. Ingredients:
1 large or 2 medium sized zucchini grated |
1 shallot finely chopped |
1 clove of garlic minced |
3 eggs |
1/2 cup of freshly grated parmesan cheese |
1 cup of milk |
2 cups of all purpose flour |
1/4 tsp of salt |
1/4 tsp of black pepper |
1/2 cup of vegetable oil |
sour cream (optional) |
Directions:
1. Mix zucchini,shallot, garlic, eggs, cheese, milk, flour, salt and pepper in a large bowl. 2. Mix wll into a batter. 3. In a large skillet heat the vegetable oil. 4. With a large spoon carefully drop some batter into the pan. 5. Flatten them out like a pancake only thicker. 6. Fry on both sides until golden brown. 7. Add more oil while making batches if needed. 8. Place fritters on a paper towel to drain the excess oil. 9. Serve with sour cream. Makes around 25 fritters. |
