Good use for those extra large zucchini from the garden. Ingredients:
1 1/2 lbs zucchini, peeled, seeded, and grated |
2 eggs, lightly beaten |
1/4 cup parsley, chopped |
2 tablespoons lowfat parmesan cheese, grated |
1/2 cup cottage cheese |
1 cup flour |
1 teaspoon baking powder |
Directions:
1. Mix ingredients, add salt & pepper and other spices to taste (basil, tarragon, thyme are all good). Spray a pan with cooking oil and saute.fry until done and brown on each side. |
