This came from a friend of mine who brought them to work a few years ago. They are delish! I am guessing at amounts, as zucchini will differ in size. Ingredients:
2 cups chopped zucchini |
1 cup chopped onion |
1 beaten egg |
1 teaspoon salt |
1/2 teaspoon pepper |
1/2 cup flour |
oil (for frying) |
Directions:
1. Mix all ingredients together and drop into. 2. 1/2 inch of hot oil. 3. Fry until brown. 4. Drain on paper towels. 5. You may have to add flour to mixture as you spoon, to make mixture stick. 6. You can serve with tartar sauce, if desired. |
