Started out as simple fried zucchini but I kept adding more and more ingrediants! Ingredients:
4 eggs |
2 cups shredded zucchini |
1 potato (shredded) |
1 medium onion (chopped) |
1 carrot (shredded) |
1/4 cup bell pepper (green, red, or yellow(chopped) |
1/4 cup chopped celery |
1/2 cup parmesan cheese |
2 garlic cloves (minced) |
fresh parsley (chopped) |
4 tablespoons wheat flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
salt and pepper |
Directions:
1. Mix all the ingrediants in a bowl. 2. Over medium heat in a greased pan drop tablespoons of batter on to pan to make little circles. 3. When the top starts to look dry flip it over. |
