2 eggs |
2 egg whites |
1 cup zucchini |
1 oz. feta cheese |
Directions:
1. Preheat the oven to 350. 2. Spray a oven-safe, nonstick pan and heat on medium-high. 3. Sautee leftover zucchini (or any leftover vegetable) until heated through. 4. Beat eggs & egg whites in a medium bowl. 5. Pour eggs over vegetables and lower the heat to low. 6. Just before eggs are set on top, sprinkle feta cheese and put skillet in oven. 7. Bake until top is set. |
