What to do with all that zucchini! Just a new way I used it this season. Very good Ingredients:
2 zucchini |
1 egg white |
1/4 cup milk |
1/2 cup shredded parmesan |
1/2 cup seasoned breadcrumbs |
Directions:
1. Preheat oven to 425 2. Cut zucchini into 3 inch sticks. 3. Whisk and egg white in a small bowl & add 1/4 cup milk 4. Combine half cup shredded parmesan & half cup bread crumbs in a separate bowl. Dip zucchini in egg mix then bread crumb mix. 5. Coat a baking sheet with cooking spray and place zucchini on sheet. 6. Bake for 25 to 30 minutes, until golden and brown. |
