Most excellent dipped in a chunky tomato sauce Ingredients:
1 large zucchini cut into 1/2 inch disks |
1 egg, beaten |
1/2 c wheat chex crumbs (measure first, then crush) |
1/4 c parmesan |
dash garlic powder |
dash basil |
dash oregano |
dash parsley |
salt and pepper to taste |
non-stick cooking spray (i use olive oil in a mister) |
Directions:
1. Preheat oven to 350 degrees. 2. Combine the cereal, cheese and spices in a large plastic bag. 3. Dip the zucchini slices in the beaten egg and then roll in the dry mixture. 4. Place the coated zucchini on a foiled line cookie sheet, sprayed w/ cooking spray. 5. Spray the tops with a little more coking spray. 6. Bake for 20 minutes, turning once. |
