A great way to use that zucchini that is ready in your garden. Great with a dill vegetable dip! Ingredients:
4 medium zucchini |
1/4 cup of flour |
dash salt |
1 cup of flour |
2 eggs |
1 1/2 tablespoon of water |
1 c parmesan cheese |
1/2 cup vegetable oil |
Directions:
1. Remove ends of zucchini, cut into shoestring strips about 4 inches long 2. Sprinkle with salt and roll in flour (1/4 cup) 3. Shake off 4. Beat eggs with water 5. Mix 1 cup flour and Parmesan cheese in another bowl 6. Drop the zucchini strips into egg mixture 7. Then roll in flour and cheese mixture 8. Heat vegetable oil in skillet or deep fryer 9. Drop a few handfuls of strips at a time once oil has reached 375F. 10. Fry until golden 11. Drain on paper towels 12. Serve warm |
