This is a colorful and tasty side dish. It took 5 minutes in my pressure cooker but of course these vegetable may be placed in a pot and cooked on the stove top is some water or broth or even in the micro. Along with cheese and spices, makes for a great side dish. Read more . One can also add some sliced cooked onions as well as mushrooms to this dish too. Ingredients:
6 small young thin zucchini, cut in rounds |
1 medium eggplant washed and unpeeled and cubed |
1/2 cup grated cheese of choice ( cheddar , mozzarella etc. ) |
1-2 cups of favorite spaghetti sauce |
seasonings |
garlic, salt, pepper, smoked paprika |
optional: chopped parsley or basil etc |
Directions:
1. Cook the egg plant and zucchini ( plus other additions such as cooked, sliced mushrooms, onion, bell peppers etc ) as desired 2. Drain off excess liquid 3. Gently mix in cheese to melt along with desired amounts of spaghetti sauce and seasonings to taste |
