Very moist cake recipe that I received from a co-worker. Ingredients:
3 eggs |
2 cups sugar |
1 cup oil |
2 teaspoons vanilla |
2 cups shredded zucchini |
1 teaspoon baking powder |
2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
2 cups flour |
3/4 cup chopped dates |
1 1/2 cups nuts |
Directions:
1. Mix eggs, sugar, oil and vanilla. 2. Beat until smooth. 3. Add zucchini. 4. Stir in dry ingredients. 5. Add dates and nuts. 6. Pour into a 9x13 greased and floured pan. 7. Bake at 325 degrees for 45 minutes to one hour. |
