From the Moosewood Cookbook. Ingredients:
3 1/2 cups grated zucchini |
3 eggs (can omit any or all of the yolks) |
1/3 cup flour |
1/2 cup shredded mozzarella cheese |
1/2 cup grated parmesan cheese |
1 tablespoon fresh basil, chopped |
Directions:
1. Salt the zucchini lightly and let it sit for 15 minutes. Squeeze out the excess moisture. 2. Preheat oven to 350. 3. Combine all ingredients and spread into a 9 pie plate or a 9x13 pan, oiled. 4. Bake 20-25 minutes, or until surface is dry and firm. 5. Brush top with olive oil and broil under moderate heat for 5 minutes. 6. Top with favorite pizza toppings and return to 350 degree oven to cook for an additional 25 minutes or so. |
