Looking for different ways to use garden zucchini, I saw several similar ones for mock crab cakes using zucchini. No these don't taste like crab cakes, although totally delicious. Add real crab to the recipe and well, I think you'll love them even more! Read more ! Ingredients:
2 cups drained packed shredded or grated zucchini |
1/4 cup grated or minced onion |
1 egg |
2 tbs melted butter |
1 cup breadcrumbs |
1 tsp old bay seasoning ( seafood seasoning ) |
flour to dredge |
oil to fry |
Directions:
1. Mix all and dredge in flour. Fry in oil, turning when golden brown on each side. I got 7 cakes or patties, yield depends on how you shape them. 2. Ideally I would serve each on a lettuce leaf cup, wedge of lemon and tarter sauce on the side. |
