A tasty side that pairs well with just about any meat. I particularly like it with lamb. Ingredients:
1 1/2 lbs zucchini |
1 tablespoon olive oil |
1/2 teaspoon cumin |
1 cup water |
2/3 cup couscous |
salt and pepper, to taste |
Directions:
1. Dice zucchini (pieces should be about 1/4 inch) and cook in oil in a large skillet with cumin, salt and pepper over medium heat, stirring, until the zucchini is tender (about 5 minutes or so). 2. Add water and bring to a boil, then add couscous and remove from heat. Cover and let stand for about five minutes, then fluff with a fork and serve. |
