I don't know about you but Im getting more zucchini from neighbors these days. I found a great cookie recipe to use some of them in. The glaze on top really makes these cookies good. Ingredients:
4 cups sifted flour |
2 tsp soda |
2 tsp baking powder |
1/2 tsp ginger |
1 tsp salt |
1 tsp nutmeg |
1 tsp cinnamon |
2 cup brown sugar |
2 cup grated zucchini |
1 cup salad oil |
2 tsp vanilla |
2 cup raisin(optional) you can add 1 cup of chocolate chips |
1 cup walnuts |
glaze |
2 cup powdered sugar |
1 tsp vanilla |
1/4 cup milk |
Directions:
1. Sift frist 7 ingredients. 2. Mix sugar, zucchini, oil and vanilla; add flour mixture. 3. Stir until smooth. 4. Add raisins(optional) or chocolate chips and nuts. 5. Drop by spoonfuls onto lightly greased cookie sheet. 6. Bake at 350* for 10 to 15 minutes. 7. Glaze while warm 8. Can subsititute dates and coconut, dates and nuts , or orange juice for milk in glaze. |
