If you love zucchini bread, why wouldn't you love zucchini cookies? Ingredients:
1/2 cup shortening |
1/2 cup sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
3 cups grated zucchini |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
3 1/2 cups flour |
1 cup nuts, chopped |
1 cup dates, chopped |
Directions:
1. Cream together the shortening and sugars. Add eggs and beat well. Beat until fluffy. 2. Stir in zucchini. Add dry ingredients. Add chopped nuts and dates. 3. Drop by teaspoonfuls into greased cookie sheet. Bake at 375 degrees for 12-15 minutes. 4. You can substitute chocolate chips or raisins for dates. |
