Ingredients:
2 medium zucchini, cut into 1/4 in rounds
2/3 cup breadcrumbs
1/3 cup parmesan cheese
1 cup flour
2 whole eggs
2 tablespoons butter
Directions:
1. Combine bread crumbs adn Parmesan cheese.
2. Place flour in shallow dish.
3. Beat 2 eggs and set aside.
4. Heat 2 tbsp butter in skillet over medium heat.
5. Season zuccchini with salt and pepper.
6. Dredge in flour, beaten egg, then bread crumb mixture.
7. Saute until golden brown.
