From Hamburg Journal. Ingredients:
2 medium zucchini, cut into 1/4 in rounds |
2/3 cup breadcrumbs |
1/3 cup parmesan cheese |
1 cup flour |
2 whole eggs |
2 tablespoons butter |
Directions:
1. Combine bread crumbs adn Parmesan cheese. 2. Place flour in shallow dish. 3. Beat 2 eggs and set aside. 4. Heat 2 tbsp butter in skillet over medium heat. 5. Season zuccchini with salt and pepper. 6. Dredge in flour, beaten egg, then bread crumb mixture. 7. Saute until golden brown. |
