A blondie type bar with the added zing of coffee. No need to peel the zukes. And you can just dice them instead of shredding if you prefer. Ingredients:
1 teaspoon hot water |
1 tablespoon instant coffee granules (i use instant espresso powder) |
1 egg, slightly beaten |
3/4 cup granulated sugar |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 cup zucchini, shredded (or diced) |
1/2 cup nuts, chopped |
Directions:
1. Preheat oven to 350°F. 2. Grease and flour a 8x8-inch baking pan. 3. Dissolve instant coffee in hot water. 4. Mix coffee with remaining ingredients together in a large bowl, until just moistened. 5. Spread into prepared pan. 6. Bake 25 minutes. 7. Cool in pan and cut into 9 bars. |
